How it works

The word ounce is confusing because it has two meanings. A weight ounce, used for dry ingredients, is about 28.35 grams. A fluid ounce measures volume and is about 29.57 milliliters. Water happens to weigh almost the same in both, but most ingredients do not: a cup of flour is 8 fluid ounces yet weighs only about 4.2 ounces.

Use the first converter for dry ingredients measured by weight, such as flour, sugar, chocolate or nuts. Use the second converter for liquids measured by volume, such as milk, juice or cream. If a recipe just says ounces next to a liquid, it almost always means fluid ounces.
